Ingredients
- 1 pound mild Italian sausage
- 1/2 cup diced bacon
- 1 tablespoon unsalted butter
- 1 large onion, finely chopped
- 6 cloves garlic, minced
- 3 tablespoons flour
- 6 cups low-sodium chicken broth
- 4–5 small Russet potatoes, sliced
- 1 cup half-and-half or heavy cream
- 3 cups chopped kale (or spinach/Swiss chard)

Instructions
- In a heavy pot over medium-high heat, brown the sausage using a wooden spoon. Drain excess oil and set aside.
- In the same pot, cook diced bacon until crispy. Remove excess fat but keep some drippings.
- Sauté onions in reserved drippings until soft; add garlic and cook until fragrant.
- Stir in flour to thicken; gradually add chicken broth and spices.
- Add sliced potatoes and cook until fork-tender.
- Lower heat and mix in cream along with cooked sausage and bacon. Add kale and simmer for a couple of minutes.
- Serve hot with grated Parmesan on top.
