- 3 cups rolled oats

- 1 3/4 cups non-dairy milk
- 2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water)
- 1/2 cup pure maple syrup
- 1 teaspoon vanilla extract

Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- Combine ground flaxseed with water in a small bowl to create flax eggs; let thicken for about 5 minutes.
- In a large bowl, mix rolled oats, nuts, spices, baking powder, and salt.
- Whisk together applesauce, non-dairy milk, flax eggs, maple syrup, and vanilla in another bowl.
- Combine wet and dry ingredients until just mixed; fold in fruit of choice.
- Pour into prepared pan and bake for 35–45 minutes until set.
- Cool slightly before serving.
