  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 package taco seasoning
  • ½ cup water
  • 1 can black beans (15 ounces), drained and rinsed
  • 1 can diced tomatoes with green chiles (10 ounces)
  • ½ cup sour cream
  • 1 bag Fritos corn chips (9.25 ounces)
  • 2 cups Mexican-style shredded cheese
  • Toppings: sliced green onions, sour cream, guacamole, salsa, jalapeños

Instructions

  1. Preheat the oven to 350°F. Spray a 13×9 baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, brown the ground beef until nearly cooked through. Add the chopped onion and cook until soft.
  3. Stir in the taco seasoning and water; bring to a boil while stirring.
  4. Reduce heat and mix in black beans, diced tomatoes, and sour cream. Cook until heated through.
  5. Layer Fritos at the bottom of the baking dish followed by half of the cheese, the beef mixture, and remaining cheese.
  6. Cover with foil and bake for 15 minutes; remove foil and bake an additional 5 minutes until bubbly.
  7. Serve topped with additional Fritos and desired toppings.
