  • 3 carrots (peeled and chopped)
  • 2 celery stalks (chopped)
  • 1 cup chopped yellow onion
  • 3 minced garlic cloves
  • 3 Yukon gold potatoes (peeled and chopped)
  • 1 cup green beans (fresh or frozen)
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 32 oz vegetable broth
  • 30 oz canned diced tomatoes (with liquid)
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp ground black pepper

Instructions

  1. In a large pot over medium-high heat, sauté olive oil, carrots, celery, and onion for about 5 minutes until softened.
  2. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in vegetable broth, diced tomatoes, potatoes, green beans, Italian seasoning, salt, and pepper; bring to a boil.
  4. Reduce heat and simmer for 8-10 minutes until vegetables are tender.
  5. Add frozen corn and peas; cook for another 2 minutes until heated through.
