- 2 cups pineapple chunks (fresh or frozen)
- 1 red bell pepper (diced)
- 3/4 cup green peas (thawed)
- 1 cup purple cabbage (shredded)
- 1/2 red onion (diced)
- 3 cloves garlic (minced)
- 4 tbsp tamari
- 1.5 tbsp maple syrup

Instructions
- Whisk together tamari, maple syrup, garlic powder, hot sauce, and ginger in a small bowl; set aside.
- Heat a cast iron skillet over medium-high heat and stir-fry pineapple until caramelized; transfer to a bowl.
- Sauté bell pepper and onion in the same skillet until slightly colored; add to the bowl.
- Stir-fry purple cabbage for about one minute until wilted; move to one side.
- Add a splash of water or oil, then sauté garlic until fragrant before mixing in rice and green peas along with the sauce.
- Serve garnished with cilantro, scallions, sesame seeds, and lime juice.
