  3. Add vanilla and gelatin: Remove from heat, stir in vanilla extract, and whisk in bloomed gelatin until dissolved.
  4. Strain and pour: Strain the mixture through a fine-mesh sieve into a measuring cup. Grease ramekins lightly and pour the mixture evenly.
  5. Chill: Refrigerate for at least 4 hours or overnight until set.
  6. Serve: Unmold the panna cotta onto plates and spoon fresh berry sauce over just before serving.
