Ingredients
- 1 cup salted butter (room temperature)
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1 teaspoon pure vanilla extract
- 6 tablespoons salted butter
- ½ cup light corn syrup
- 1 cup granulated sugar
- 1 cup heavy whipping cream (divided)
- 1¼ cups milk or dark chocolate
Instructions
- Preheat oven to 350°F (175°C). Cream together room temperature butter and powdered sugar until fluffy. Gradually mix in flour and vanilla, then press into a greased baking pan. Bake for about 20 minutes until lightly golden.
- In a saucepan over low heat, combine six tablespoons of butter, corn syrup, granulated sugar, salt, and half a cup of heavy cream. Stir until melted; simmer for about 5 minutes. Pour over the baked shortbread.
- Allow the caramel layer to cool for an hour at room temperature before chilling in the refrigerator for at least two hours.
- Melt chocolate and remaining cream in another saucepan over low heat; pour over the chilled caramel layer.
- After the chocolate sets for an hour, cut into squares and serve.
