Ingredients
- 2 lbs Russet or Yukon Gold potatoes
- 4 oz shredded cheese (your choice)
- 4 tbsp unsalted butter
- ¼ cup sour cream
- ¼ cup buttermilk
- 4 strips cooked bacon
- Kosher salt and black pepper
- Scallions and fresh herbs for garnish
Instructions
- Preheat oven to 400°F.
- Rub potatoes with oil, season with salt and pepper, and bake on a wire rack for 45 minutes to 1 hour until tender.
- Cool slightly, then cut in half lengthwise and scoop out flesh into a mixing bowl.
- Mash potato flesh with half the cheese, butter, scallions, bacon, sour cream, buttermilk, salt, and pepper until smooth.
