  • 2 cups fresh baby spinach
  • ½ cup heavy whipping cream
  • 1 tablespoon tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper
  • ½ teaspoon ground black pepper
  • parsley, chopped for garnish

Instructions

  1. In a large Dutch oven over medium-high heat, brown the sausage until cooked through, breaking it apart as it cooks (about 10-15 minutes).
  2. Reduce heat to medium and add the onions, celery, and carrots; sauté until softened (about 3-5 minutes). Stir in garlic and cook for an additional minute.
  3. Mix in tomato paste and seasonings; stir well to combine.
  4. Pour in chicken broth and add the beans; bring to a simmer and cook for about 6-7 minutes until vegetables are tender.
  5. Add heavy cream and spinach; cook until spinach wilts (about 5 minutes).
  6. Serve warm garnished with chopped parsley.
