Ingredients
- 4 salmon fillets
- 1 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic
- 3–4 sun-dried tomatoes (sliced)
- ½ cup dry white wine
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup fresh spinach
- Salt and pepper to taste
Instructions
- Pat salmon dry and season with salt and pepper. Heat olive oil and butter in a frying pan over medium-high heat.
- Sear salmon skin-side up for about 6–7 minutes until golden brown. Remove from pan but don't fully cook.
- In the same pan, add minced garlic and sun-dried tomatoes; sauté for 30 seconds. Deglaze with white wine and reduce by half (about 5 minutes).
- Stir in heavy cream and Parmesan cheese until smooth, then add fresh spinach and return salmon to the pan. Simmer on low for an additional 5 minutes until cooked through.
