  • 3 cups mixed fresh berries (blueberries, strawberries, raspberries)
  • 1 & 3/4 cups graham cracker crumbs
  • 5 tablespoons unsalted butter (melted)
  • 16 ounces cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • Juice of 1 medium lemon
  • 1 cup heavy cream

Instructions

  1. Prepare the crust by mixing graham cracker crumbs and melted butter until well combined. Press firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator.
  2. Blend mixed berries with 3 tablespoons of sugar until just combined; set aside.
  3. In a bowl, beat room temperature cream cheese with remaining sugar and lemon juice until smooth. Fold in blended berry mixture.
  4. In another bowl, whip heavy cream to soft peaks and gently fold it into the cream cheese mixture.
  5. Pour the filling over the chilled crust and spread evenly. Cover loosely with plastic wrap and refrigerate for at least 8 hours or overnight before serving.
