Ingredients
- 3 cups mixed fresh berries (blueberries, strawberries, raspberries)
- 1 & 3/4 cups graham cracker crumbs
- 5 tablespoons unsalted butter (melted)
- 16 ounces cream cheese (room temperature)
- 3/4 cup granulated sugar
- Juice of 1 medium lemon
- 1 cup heavy cream
Instructions
- Prepare the crust by mixing graham cracker crumbs and melted butter until well combined. Press firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator.
- Blend mixed berries with 3 tablespoons of sugar until just combined; set aside.
- In a bowl, beat room temperature cream cheese with remaining sugar and lemon juice until smooth. Fold in blended berry mixture.
- In another bowl, whip heavy cream to soft peaks and gently fold it into the cream cheese mixture.
- Pour the filling over the chilled crust and spread evenly. Cover loosely with plastic wrap and refrigerate for at least 8 hours or overnight before serving.
