  • 2 tablespoons plus 1 teaspoon baking powder (24g)
  • Pinch of salt
  • 7 tablespoons cold unsalted butter (94g), cut into small pieces
  • 1/2 cup sugar (86g)
  • 3 eggs, divided
  • 3/4 cup buttermilk (175ml), less 1 tablespoon
  • 2/3 cup sultanas or golden raisins (optional) (100g)

Instructions

  1. Preheat your oven to 400°F (205°C).
  2. In a mixing bowl, combine flour, baking powder, salt, and sugar. Cut in cold butter until crumbly.
  3. In a separate bowl, whisk two eggs with buttermilk; stir into dry ingredients until just combined.

  6. Flatten to about 1 inch thick and chill for 30–45 minutes.
