  • 20 oz cheese tortellini (uncooked)
  • 10 oz cherry tomatoes (halved)
  • 8 oz mozzarella pearls

  • ¼ cup chopped basil
  • ½ cup olive oil
  • 2 tbsp balsamic vinegar
  • 34 garlic cloves (minced)
  • ¾ tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in a large pot of salted boiling water until al dente, according to package instructions. Drain and rinse with cool water.
  2. While the tortellini cooks, prepare the vegetables by chopping the spinach, halving the tomatoes, and mincing the garlic.
  3. In a mixing bowl, combine the cooked tortellini, spinach, tomatoes, mozzarella pearls, basil, and garlic.
  4. Drizzle olive oil and balsamic vinegar over the salad. Season with Italian seasoning, salt, and pepper; toss gently to combine.
