  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/2 cup chicken or vegetable broth
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the spaghetti according to package instructions in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil. Once hot, sauté minced garlic for about 30 seconds.
  3. Add shrimp to the skillet and cook until pink and opaque, about 3–5 minutes. Season with red pepper flakes, salt, and black pepper.
  4. Stir in cherry tomatoes and cook gently for about 2 minutes until softened. Add spinach until wilted, then pour in chicken broth and bring to a simmer.
  5. Combine the cooked spaghetti with the shrimp mixture. Toss well to combine; add reserved pasta water if needed for consistency.
  6. Serve hot with optional grated Parmesan cheese and fresh basil if desired.
