  • 14 to 16 ounces firm tofu
  • 1/2 cup unsweetened nondairy milk
  • 3 tablespoons nutritional yeast
  • 6 large tortillas
  • 12 slices vegan cheese (or 2 cups cheeze shreds)
  • 3 small avocados (sliced)
  • 4 cups chopped fresh kale (or spinach)

Instructions

  1. Crumble the pressed tofu into 1-inch chunks and set aside.
  2. In a medium bowl, combine nondairy milk, nutritional yeast, Dijon mustard, turmeric, paprika, garlic powder, onion powder, and kala namak.
  3. Heat olive oil in a nonstick skillet over medium-high heat. Add the tofu in a single layer and cook undisturbed for 3 minutes; stir gently and cook for another 4 minutes until golden.
  4. Pour the sauce over the tofu and mix gently; cook for an additional 2 minutes until heated through.
  5. Assemble each wrap by layering vegan cheese slices, avocado, sautéed kale, and evenly dividing the tofu mixture.
  6. Optional: Heat each wrapped tortilla in the skillet for about 2 minutes on each side until golden brown.
