Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 1 teaspoon pure vanilla extract
  • 2¼ cups roasted sea salt peanuts
  • 1 bag semi-sweet chocolate chips

Instructions

  1. Line a 9×13 cake pan with parchment paper and spread 2 cups of roasted sea salt peanuts evenly on the bottom.
  2. In a medium-sized pan, combine butter, sugar, and vanilla over medium heat until melted and simmering.
  3. Cook for 7 to 8 minutes until golden brown, stirring occasionally.
  4. Pour the caramel mixture over the layer of peanuts.
  5. Spread the hot toffee evenly with an offset spatula.
  6. Sprinkle chocolate chips over the hot toffee and let them melt for 2 to 3 minutes.
  7. Spread the melted chocolate across the toffee layer.
  8. Top with remaining chopped peanuts for added crunch.
  9. Allow to cool at room temperature for about 2 hours before refrigerating until firm.
