- 15 ounces kidney beans (drained and rinsed)
- 15 ounces pinto beans (drained and rinsed)
- 2 cloves garlic (diced)
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground oregano
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 cup masa harina (white or yellow)
- 8 ounces tomato sauce
- 14.5 ounces diced tomatoes (with juice)
- Shredded cheddar cheese
- Sour cream
- Lime wedges
- Tortilla chips or Fritos
- Diced green onions
Instructions
- In a large pot, brown 2 pounds of ground beef over medium heat until no pink remains. Drain excess fat.
- Sauté 2 cloves of diced garlic in the pot for 1 minute until fragrant.
- Add 8 ounces of tomato sauce, 2 tablespoons of chili powder, 1 teaspoon each of ground cumin and oregano, plus salt and cayenne pepper; stir well.
- Reduce heat and let the chili simmer for 60 minutes, stirring occasionally.
- If needed, adjust consistency with water; then whisk 1/4 cup masa harina with water until smooth and add to the pot, cooking for an additional 5 minutes.
- Fold in drained kidney and pinto beans, allowing them to warm through for about 10 minutes.
- Serve in bowls topped with shredded cheese, sour cream, diced green onions, lime wedges, and tortilla chips.
