  • 1 pound rotini
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 15 ounces canned black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 2 cups halved cherry tomatoes
  • 2 cups shredded Fiesta blend cheese
  • 16 ounces Catalina dressing
  • 3 tablespoons sour cream
  • 9 ounces Nacho Cheese Doritos (crushed)
  • 2 cups shredded iceberg lettuce

Instructions

  1. Cook rotini in a large pot of boiling water according to package directions. Drain and rinse under cold water.
  2. In a skillet, brown the ground beef over medium heat; drain excess grease. Stir in taco seasoning and water; cook until liquid evaporates.
  3. In a mixing bowl, combine cooked pasta, seasoned beef, black beans, corn, onion, tomatoes, and cheese.
  4. In a small bowl, whisk together Catalina dressing and sour cream until smooth; pour over the pasta mixture.
  5. If serving immediately, add crushed Doritos and lettuce; stir gently to combine.
