- 1 pound ground turkey
- 1 onion (diced)
- 1 pod garlic (diced)
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 8 ounces tomato sauce
- 2 cups water
- 1 cup long-grain rice
- 1 teaspoon salt
- 1 tablespoon vegan butter
- 1/4 cup cilantro (for cilantro lime rice)
- 2 tablespoons lime juice (for cilantro lime rice)
- romaine lettuce (chopped)
- 1 can whole corn
- 1 can black beans
Instructions
- In a skillet over medium heat, cook the ground turkey with diced onion and garlic until browned. Stir in spices and cook for an additional 5 minutes.
- Add tomato sauce and water to the skillet, mixing well. Let simmer while preparing the rice.
- In a pot, boil 2 cups of water, add rice and salt; cover and reduce heat to low for about 15 minutes until tender.
