  • ½ lb Italian sausage (mild or spicy)
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • ½ sweet onion, sliced
  • 2 medium bell peppers (red or yellow), sliced
  • 3 garlic cloves, sliced
  • 8 oz dry short-cut pasta (rigatoni, penne, or fusilli)
  • Kosher salt, to taste

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add sausage and cook until browned; stir in 1 tbsp tomato paste for flavor.
  3. In the same skillet, heat olive oil and sauté onions and peppers until caramelized (15-20 minutes).
  4. Mix in remaining tomato paste, garlic, brown sugar, oregano, and balsamic vinegar; season with salt.
  5. Cook pasta in salted boiling water until al dente; reserve ½ cup pasta water before draining.
  6. Combine cooked pasta and sausage with the sautéed vegetables in the skillet; add reserved pasta water as needed to create a silky sauce.
  7. Serve immediately.
