Ingredients
- 1 1/2 cups uncooked millet
- 1/3 – 1/2 cup sliced black olives
- 1/2 cup capers
- 1/2 cucumber, diced
- 2 spring onions, sliced
- 1 small red pepper, diced
- juice of 1 lemon
- 2 tsp dijon mustard
- 2 tbsp apple cider vinegar
- optional maple syrup
- salt and black pepper
Instructions
- Rinse millet under cold water and boil it in 4.5 cups of water for about 20 minutes until tender. Drain and cool.
- While millet cools, prepare the vegetables by dicing and slicing as needed.
- In a mixing bowl, whisk together lemon juice, dijon mustard, apple cider vinegar, optional maple syrup, salt, and black pepper to create the dressing.
- Combine cooled millet with the dressing in a large bowl. Add olives, capers, cucumber, spring onions, and red pepper; mix well.
- Chill in the fridge before serving for enhanced flavors.
