Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter with both sweeteners until smooth.
  3. Add the pureed pumpkin, egg, and vanilla extract; beat until creamy.
  4. In another bowl, combine almond flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Line a cookie sheet with parchment paper. Form sticky dough balls using approximately 1½ tablespoons each and flatten them slightly on the sheet.
  7. Bake for 10-13 minutes until edges are golden and centers remain soft.
  8. Allow cookies to cool on the baking mat for about 10 minutes before transferring to a cooling rack.
