  • 2 bell peppers
  • ½ onion

  • Chipotle peppers in adobo sauce

  • Fresh cilantro
  • Jalapeños

Instructions

  1. Marinate the steak with olive oil, lime juice, chipotle peppers, garlic, salt, pepper, cumin, and oregano for 10-20 minutes.
  2. While marinating, chop bell peppers and onions; cook rice according to package instructions.
  3. Heat a skillet over medium-high heat and sear the marinated steak for 3–5 minutes on each side until desired doneness; let it rest.
  4. In the same skillet, sauté bell peppers and onions until charred; set aside.
  5. Mash avocados with salt, cilantro, and diced jalapeños for guacamole.
  6. Assemble bowls starting with shredded romaine (optional), cooked rice, sliced steak, sautéed veggies, guacamole, and any additional toppings.
