- 1 tsp butter (for greasing muffin tin)
- 2 tbsp pumpkin seeds (for topping)
- 1/2 tbsp brown sugar (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a muffin tin.
- In a bowl, whisk together flour, baking soda, spices, and sugar.
- In another bowl, mix canola oil, pumpkin, eggs, and vanilla until combined.
- Gently fold wet ingredients into dry mixture.
- For the cream cheese filling, beat cream cheese with sugar, milk, flour, and vanilla until smooth.
- Fill muffin cups halfway with batter, add a tablespoon of filling, then top with remaining batter.
- Sprinkle pumpkin seeds and brown sugar on top.
