  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper
  • ¾ cup corn kernels

  • ⅓ cup sour cream
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • 3 tbsp olive oil
  • 1 Tbsp chipotle pepper in adobo
  • 1½ Tbsp honey
  • 1 Tbsp lime juice
  • 3 Tbsp fresh cilantro, chopped
  • 12 Tbsp water
  • ¼ tsp salt

Instructions

  1. 1. Marinate diced chicken in lime juice, olive oil, and spices for at least 15 minutes.
  2. 2. Cook rice according to package instructions.
  3. 3. Prepare the sauce by blending sour cream with honey, chipotle peppers, lime juice, cilantro, and water.
  4. 4. Sauté marinated chicken in a skillet until fully cooked (about 12-15 minutes).
  5. 5. In the same skillet, sauté bell peppers and onions for about 8 minutes before adding garlic.
  6. 6. Assemble wraps by layering rice, chicken mix, beans, corn, cheese, and sauce on warmed tortillas.
