  • 2 cups + 1 tablespoon all-purpose flour
  • 200 grams (about ¾ cup) sourdough discard (unfed, at room temperature)
  • 1 egg (lightly beaten)
  • 1 tablespoon fresh parsley or rosemary (chopped)
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 9 tablespoons unsalted butter (melted and softened)
  • Flaky sea salt (for topping)

Instructions

  1. In a stand mixer bowl, combine warmed milk, yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, and garlic powder. Mix on low speed.
  2. Gradually add melted butter; increase speed to medium until shaggy dough forms.
  3. Knead on a floured surface until smooth and slightly tacky (about 3–4 minutes).
  4. Place in a greased bowl; cover and let rise until doubled in size (60–90 minutes).
  5. Prepare topping by mixing softened butter with herbs, garlic powder, and salt; reserve some for later.
  6. Shape dough into pieces, filling each with the butter mixture before placing them in a greased loaf pan.
  7. Let rise until puffy (30–45 minutes). Preheat oven to 350℉.
  8. Bake uncovered for about 30 minutes; cover with foil and bake an additional 5–10 minutes until golden brown.
  9. Brush with reserved butter mixture and sprinkle with flaky sea salt before cooling slightly.
