Ingredients

  • 452 grams water
  • 7 grams instant yeast
  • 42 grams honey (or cane sugar)
  • 170 grams sourdough discard
  • 540 grams bread flour
  • 90 grams whole wheat flour
  • 12 grams salt
  • 56 grams olive oil
  • Toppings: flaky sea salt, sliced tomatoes, fresh rosemary, sliced onions, ground pistachios, sliced lemons, olives, ground pepper, garlic, grapes

Instructions

  1. In a mixing bowl, combine water, instant yeast, honey, and sourdough discard until smooth.
  2. Gradually fold in bread flour, whole wheat flour, and salt until fully hydrated.
  3. Knead the olive oil into the dough until absorbed.
  4. Cover with plastic wrap and let rest for 15 minutes.
  5. Perform stretch and fold technique; repeat after another 15-minute rest.
  6. Allow the dough to rise at room temperature until doubled (30-45 minutes).
  7. Preheat the oven to 425°F (218°C) and prepare baking sheets with oil and parchment.
  8. Transfer dough to pans; cover and let rise for another 15 minutes.
  9. Stretch dough to fill pans; let rise again for 20 minutes.
  10. Add olive oil and desired toppings before baking for 25-30 minutes or golden brown.
