  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar (for frosting)
  • 3 1/4 cups powdered sugar

Instructions

  1. Cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until fluffy.
  2. In a separate bowl, whisk together flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually mix dry ingredients into wet until just combined.
  4. Chill the dough for at least 30 minutes.
  5. Preheat the oven to 350°F (177°C).
  6. Scoop dough into balls and flatten slightly on a lined baking sheet.
  7. Bake for 10–12 minutes; cool completely before frosting.
  8. Whip frosting ingredients together and pipe onto cooled cookies.
