  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter and brown sugar until smooth. Add the egg, molasses, vinegar, and vanilla extract; mix well.
  3. In another bowl, whisk together the flour, baking soda, salt, and spices.
  4. Gradually combine the dry mixture with the wet ingredients until a soft dough forms.
  5. Roll out the dough on a floured surface to about 1/4 inch thick and cut into desired shapes.
  6. Place cookies on a parchment-lined baking sheet and bake for 10-12 minutes until edges are set but centers remain soft.
