Ingredients
- 1 lb ground beef
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 packet taco seasoning mix
- 1 can diced tomatoes with green chilies
- 1 can black beans (drained and rinsed)
- 1 can corn (drained)
- 1 cup salsa
- 1 cup shredded Mexican cheese blend
- 6 small tortillas (cut into strips)
Instructions
- In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
- Add diced onion to the skillet; cook until softened (3–4 minutes). Stir in minced garlic and cook for another minute.
- Mix in taco seasoning and canned tomatoes with their juice; remove from heat.
- Spray slow cooker with non-stick spray. Spread a thin layer of salsa on the bottom, followed by layers of tortilla strips, half of the beef mixture, beans, and corn. Repeat layers and finish with remaining tortilla strips and salsa.
- Cover and cook on low for 4–5 hours or high for 2–3 hours.
- About 15 minutes before serving, sprinkle cheese on top; cover to melt.
