Ingredients
- 225 g rice vermicelli noodles
- 12 shrimp (peeled)
- 1 cup Chinese BBQ pork (char siu)
- 2 cm ginger (grated)
- 4 cloves garlic (minced)
- Mixed vegetables: bell pepper, onion, carrot, snow peas
- Madras curry powder

Instructions
- Soak rice vermicelli noodles in hot water until soft; drain and set aside.
- In a wok over medium-high heat, sauté grated ginger and minced garlic in oil until fragrant.
- Add sliced vegetables and stir-fry for 3–5 minutes until softened.
- Push veggies to the side and add shrimp and char siu; cook until shrimp turns pink.
- Mix in the drained noodles and add seasonings: curry powder, soy sauce, fish sauce, cooking wine, sugar, sesame oil, and water. Toss to combine.
- Create space in the pan to scramble two eggs; mix well once cooked.
- Serve hot garnished with chopped green onions.
