Ingredients
- 6–8 mini Persian cucumbers
- 2 teaspoons kosher salt
- 1 garlic clove (minced)
- 2 teaspoons sugar
- 2 teaspoons soy sauce
- 2 tablespoons rice wine vinegar
- 1/2 teaspoon fish sauce
- 1 teaspoon toasted sesame oil
- 1 tablespoon chili paste (to taste)
- 1 tablespoon sesame seeds (black and white mix)
Instructions
- Slice the cucumbers using a rolling cut technique and place them in a mixing bowl. Sprinkle with kosher salt and mix well. Let sit for 30 minutes to extract moisture, then rinse in a colander.
- In the same bowl, combine drained cucumbers with minced garlic, sugar, soy sauce, rice wine vinegar, fish sauce, toasted sesame oil, and chili paste. Toss until evenly coated.
- Cover and chill in the refrigerator for at least 30 minutes before serving. Just before serving, sprinkle sesame seeds on top.
