- 8 cups thinly sliced potatoes (about 3 pounds)
- 4 tablespoons butter
- ½ cup diced onion
- 1 teaspoon minced garlic
- 6 tablespoons flour
- 1 cup chicken broth
- 2 cups milk
- 1 cup grated cheddar cheese
- Fresh thyme, for garnish
Instructions
- Preheat oven to 350°F and prepare a 9×13 baking pan with nonstick spray.
- Slice the potatoes thinly using a mandolin.
- In a large saucepan over medium-low heat, melt butter, then add onion and garlic until soft.
- Stir in flour and cook for an additional two minutes. Gradually whisk in the chicken broth and milk until thickened. Season with salt and pepper.
- Remove from heat; stir in thyme and cheddar cheese until melted.
- Layer half of the sliced potatoes in the baking pan, season with salt and pepper, then pour half of the sauce over them. Repeat with remaining potatoes and sauce.
- Cover with foil and bake for 45 minutes, then uncover and bake another 30 minutes until golden brown.
