  • 8 cups thinly sliced potatoes (about 3 pounds)
  • 4 tablespoons butter
  • ½ cup diced onion
  • 1 teaspoon minced garlic
  • 6 tablespoons flour
  • 1 cup chicken broth
  • 2 cups milk
  • 1 cup grated cheddar cheese
  • Fresh thyme, for garnish

Instructions

  1. Preheat oven to 350°F and prepare a 9×13 baking pan with nonstick spray.
  2. Slice the potatoes thinly using a mandolin.
  3. In a large saucepan over medium-low heat, melt butter, then add onion and garlic until soft.
  4. Stir in flour and cook for an additional two minutes. Gradually whisk in the chicken broth and milk until thickened. Season with salt and pepper.
  5. Remove from heat; stir in thyme and cheddar cheese until melted.
  6. Layer half of the sliced potatoes in the baking pan, season with salt and pepper, then pour half of the sauce over them. Repeat with remaining potatoes and sauce.
  7. Cover with foil and bake for 45 minutes, then uncover and bake another 30 minutes until golden brown.
