  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 4 oz cream cheese, softened
  • 1/2 cup thick caramel sauce
  • Flaky sea salt for topping

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, granulated sugar, and vanilla extract in a bowl until smooth. Transfer to a piping bag and chill for 15 minutes.
  2. In another bowl, whisk together flour, baking soda, baking powder, and salt. Beat butter with both sugars until fluffy. Add egg and vanilla; mix well. Gradually incorporate dry ingredients until just combined.
  3. Scoop about 2 tablespoons of dough, flatten it, place cheesecake filling in the center, seal the dough around it, and shape into balls.
  4. Chill assembled cookies for 20–30 minutes before baking at 350°F (175°C) for 10–12 minutes until edges are golden.
  5. Once cooled, pipe more cheesecake filling on top and drizzle with caramel sauce; finish with flaky sea salt.
