  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together olive oil, garlic, thyme, rosemary, orange zest, orange juice, honey, soy sauce, salt, and pepper.
  3. Place the whole chicken in a roasting pan and rub the marinade all over.
  4. Surround the chicken with quartered onion and pour chicken broth into the pan.
  5. Roast for about 1 hour and 15 minutes until the internal temperature reaches 165°F (75°C).
  6. Let it rest for 10 minutes before carving.
