  • 1 1/2 cups Arborio rice
  • 12 oz cremini or button mushrooms, sliced
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth, warmed
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese, plus extra for garnish
  • 2 tbsp unsalted butter
  • 1/2 tsp salt, to taste
  • 1/4 tsp black pepper, to taste
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Add mushrooms and cook until golden brown (6-8 minutes). Remove and set aside.
  2. In the same skillet, add chopped onion; cook until translucent (about 3 minutes). Add minced garlic; cook for another minute.
  3. Stir in Arborio rice and toast until edges are translucent (about 2 minutes).
  4. Pour in the white wine; stir continuously until absorbed.
  5. Gradually add warm vegetable broth one ladle at a time, stirring frequently until absorbed before adding more (18-20 minutes total).
  6. Stir in the sautéed mushrooms, remaining butter, grated Parmesan, salt, and pepper. Cook on low heat for an additional 2 minutes.
  7. Serve immediately garnished with extra Parmesan and fresh parsley if desired.
