Ingredients
- 1 lb rotini noodles
- 4 oz pepperoni, quartered
- 4 oz salami slices, cut into quarters
- 1 pint cherry tomatoes, halved
- 1 cup black olives, halved
- 1 orange bell pepper, diced
- 1 green bell pepper, diced
- 8 oz mozzarella pearls
- Dressing: olive oil, red wine vinegar, lemon juice, grated Parmesan, dried herbs (parsley and basil), garlic powder, onion powder, salt, oregano, paprika powder, pepper, sugar
Instructions
- Cook rotini noodles in salted boiling water until al dente. Drain and rinse with cold water.
- In a bowl, whisk together olive oil, red wine vinegar, lemon juice, grated Parmesan, dried herbs and spices.
- In a large mixing bowl, combine cooked noodles with pepperoni, salami, cherry tomatoes, olives, bell peppers and mozzarella.
- Pour dressing over the mixture and toss gently until evenly coated.
- Chill for at least 30 minutes before serving. Top with additional grated Parmesan if desired.
