Ingredients

  • 1 lb rotini noodles
  • 4 oz pepperoni, quartered
  • 4 oz salami slices, cut into quarters
  • 1 pint cherry tomatoes, halved
  • 1 cup black olives, halved
  • 1 orange bell pepper, diced
  • 1 green bell pepper, diced
  • 8 oz mozzarella pearls
  • Dressing: olive oil, red wine vinegar, lemon juice, grated Parmesan, dried herbs (parsley and basil), garlic powder, onion powder, salt, oregano, paprika powder, pepper, sugar

Instructions

  1. Cook rotini noodles in salted boiling water until al dente. Drain and rinse with cold water.
  2. In a bowl, whisk together olive oil, red wine vinegar, lemon juice, grated Parmesan, dried herbs and spices.
  3. In a large mixing bowl, combine cooked noodles with pepperoni, salami, cherry tomatoes, olives, bell peppers and mozzarella.
  4. Pour dressing over the mixture and toss gently until evenly coated.
  5. Chill for at least 30 minutes before serving. Top with additional grated Parmesan if desired.
