  • 1 can (14 oz) diced tomatoes
  • 3 cups low-sodium chicken broth
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped (optional)
  • Salt and pepper to taste
  • Optional: 1-2 fresh chili peppers, finely chopped (for extra spice)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, bell pepper, and carrot; sauté until tender (about 5 minutes).
  2. Stir in diced tomatoes with their juices along with chili powder, smoked paprika, cayenne pepper, ground cumin, salt, and pepper.
  3. Pour in chicken broth; bring to a boil then reduce heat to simmer.
  4. Add shrimp; cook until pink and opaque (3-5 minutes). Avoid overcooking.
  5. Remove from heat; stir in lime juice and garnish with cilantro if desired.
