  • 15.25 oz box carrot cake mix
  • 15 oz can pure pumpkin
  • 2 Tbsp flour (for streusel)
  • 2 Tbsp brown sugar (for streusel)
  • 1 tsp granulated sugar (for streusel)
  • 1/4 tsp cinnamon (for streusel)
  • 1.5 Tbsp cold butter (for streusel)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin pan with cupcake liners.
  2. In a large mixing bowl, combine the carrot cake mix and pure pumpkin until smooth.
  3. In another bowl, mix flour, brown sugar, granulated sugar, cinnamon, and cold butter until crumbly for the streusel topping.
  4. Fill each cupcake liner two-thirds full with muffin batter and sprinkle on the streusel topping.
  5. Bake for about 20 minutes or until a toothpick comes out clean.
  6. Allow muffins to cool for a few minutes in the pan before transferring them to a wire rack.
