  • 1/2 tsp pumpkin pie spice or ground cinnamon (for streusel topping)
  • 1 cup confectioners' sugar (for glaze)
  • 1/4 tsp maple extract (can substitute vanilla) (for glaze)
  • 1 Tbsp maple syrup (for glaze)
  • 1 Tbsp milk or cream (for glaze)

Instructions

  1. Preheat your oven to 350°F and grease an 8-or-9 inch light metal loaf pan.
  2. In a large bowl, cream together softened butter and dark brown sugar using a handheld mixer until smooth. Add pumpkin puree and eggs; mix well.
  3. Gradually incorporate baking powder, baking soda, salt, flour, and spices until just combined.
  4. In another bowl, prepare the streusel by mixing melted butter with flour and brown sugar until crumbly.
  5. Pour batter into the prepared pan and sprinkle streusel on top.
