- 530 grams bread flour
- 100 grams pumpkin puree
- 1/2 cup inactive sourdough starter
- 95 grams active sourdough starter
- 390 grams filtered water
- 2 teaspoons fine sea salt
- 1 tablespoon ground cinnamon
- 1/2 tablespoon pumpkin spice
- 1/4 cup sugar
Instructions
- Prepare your active sourdough starter by bringing it to room temperature at least 12 hours before use.
- In a mixing bowl, combine the all-purpose flour, active starter, water, and pumpkin puree. Mix well.
- Gradually incorporate the bread flour until fully combined. Let rest for 30 minutes (autolyse).
- Sprinkle in the salt, cinnamon, pumpkin spice, and sugar; knead gently.
- Allow the dough to rise for about 4 hours at room temperature, performing stretch and folds every hour.
- Shape into a round loaf and let proof in a basket for 1-2 hours or overnight in the fridge.
- Preheat oven to 450°F (232°C). Bake for approximately 60 minutes until golden brown.
