  • 2 ½ cups all-purpose flour
  • 2 tablespoons pumpkin pie spice
  • 2 large eggs
  • ½ cup unsalted butter (melted)
  • ½ cup brown sugar (packed)
  • ¼ teaspoon salt
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar (packed)
  • ½ teaspoon cinnamon, ground
  • ⅓ cup powdered sugar (or icing sugar)
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ¼ cup milk
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a bowl, mix chopped pecans, vanilla extract, sugar, and corn syrup; set aside.
  3. Blend cream cheese with powdered sugar and vanilla until smooth; set aside.
  4. In a large bowl, whisk together flour, baking powder, salt, pumpkin pie spice, cinnamon, and sugars.
  5. In another bowl, combine melted butter, pumpkin puree, eggs, milk, and vanilla until smooth.
  6. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  7. Fill each muffin cup halfway with batter; add a dollop of cream cheese filling in the center and cover with remaining batter.
  8. Sprinkle the pecan topping over each muffin and bake for about 35 minutes or until a toothpick comes out clean.
  9. Allow cooling for 10 minutes before transferring to a wire rack.
