  • 1 Cup chocolate chips
  • 1 Cup mini marshmallows
  • 8 graham crackers (broken into small pieces)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in the pumpkin puree, egg, and vanilla extract until combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually add dry ingredients to wet ingredients and mix until just combined.
  6. Gently fold in chocolate chips, mini marshmallows, and graham cracker pieces.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet about 2 inches apart.
  8. Bake for 12 to 14 minutes until edges are golden but centers remain soft.
  9. Let cool on the baking sheet briefly before transferring to a wire rack.
