  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 8 ounces cream cheese
  • 1/2 teaspoon vanilla
  • 1 large egg for cream cheese layer
  • 1/4 cup all-purpose flour for cream cheese layer

Instructions

  1. Preheat your oven to 325°F and grease a 9” x 5” loaf pan (line with parchment paper if desired).
  2. In a bowl, mix dry ingredients: flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, whisk together eggs, sugars, oil, pumpkin puree, and vanilla until smooth.
  4. Combine wet and dry ingredients until just mixed.
  5. For the cream cheese layer, beat cream cheese with sugar, egg, vanilla, and flour until smooth.
  6. Layer half the pumpkin batter in the pan followed by half the cream cheese mixture; repeat.
  7. Swirl gently with a knife for a marbled effect.
  8. Bake for about 1 hour and 15 minutes or until a toothpick comes out clean.
