  • 1 1/2 cups pumpkin purée
  • 1/2 cup oil
  • 2 tbsp maple syrup
  • 2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a greased loaf pan with parchment paper.
  2. Prepare the streusel topping by mixing softened vegan butter, flour, sugars, and cinnamon until crumbly; chill in the fridge.
  3. In a large bowl, mix pumpkin purée, oil, brown sugar, and maple syrup until smooth.
  4. Sift in flour, pumpkin pie spice, baking powder, baking soda, and salt; stir gently and fold in chocolate chips.
  5. Pour batter into the loaf pan, top with streusel mixture, and press down lightly.
  6. Bake for 55–60 minutes until golden brown; cool before slicing.
