Instructions

- In another bowl, combine eggs, sugar, vegetable oil, water, and vanilla extract. Mix until smooth, then stir in pumpkin puree.
- Gradually add dry ingredients to wet ingredients, folding in chocolate chips until just combined.
- Fill muffin cups two-thirds full and top with additional chocolate chips if desired.
- Bake for 26 to 29 minutes or until a toothpick comes out clean. Let cool on a wire rack.
