Description

  • 1.3 lbs ground turkey (extra lean)
  • 6 small links chicken maple sausage
  • 1 sweet onion (chopped)
  • 3 cloves garlic (minced)
  • 1 yellow bell pepper (diced)
  • 1 orange bell pepper (diced)
  • 1 can cannellini beans (15.5 oz, drained and rinsed)
  • 1 can red kidney beans (15.5 oz)
  • 1 can pumpkin purée (29 oz)
  • 1 can diced tomatoes (28 oz)
  • 12 fl oz pumpkin beer
  • ½ cup chicken broth
  • various spices including chili powder, oregano, cumin, and cayenne pepper

Instructions

  1. Slice sausages or remove from casings. Reserve with ground turkey.
  2. In a heavy-bottomed pot, heat olive oil and sauté garlic and onion until translucent. Add bell peppers and sauté for another 5 minutes.
  3. In the same pot, add more olive oil and brown the ground turkey with sausage for about 10 minutes; season with salt and pepper.
  4. Return vegetables to the pot along with diced tomatoes, pumpkin purée, beans, spices, pumpkin beer, and chicken broth; stir well.
  5. Lower heat and let simmer for 1.5 to 2 hours while stirring occasionally.
  6. Serve in bowls topped with cheddar cheese, green onions, and sour cream.
