  • 1 box Yellow Cake mix (15 oz)
  • 1 can Pumpkin Puree (15 oz)
  • 1 tsp Pumpkin Pie Spice
  • ½ cup unsalted butter (softened)
  • 4 oz Cream Cheese (softened at room temperature)
  • 1 tsp Vanilla Extract
  • 1 ½ cup Powdered Sugar
  • 12 oz Orange Candy Melts
  • 6 oz Chocolate Candy Melts
  • 3 Tbsp Vegetable Shortening (divided)

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine yellow cake mix, pumpkin puree, pumpkin pie spice, and softened butter using an electric mixer until smooth.
  2. Pour batter into a greased baking sheet and bake for about 30 minutes or until a toothpick comes out clean. Allow cooling completely.
  3. Prepare frosting by beating cream cheese and vanilla extract together, then gradually add powdered sugar until smooth.
  4. Crumble the cooled cake and mix with frosting until dough-like consistency is achieved. Roll into one-inch balls and place on parchment-lined baking sheet.
  5. Melt orange candy melts with one tablespoon of vegetable shortening. Dip one end of each stick into melted candy before inserting it into each cake ball.
  6. Coat each cake pop in melted candy melts and allow excess to drip off before setting back on parchment paper.
