Ingredients
- 1 box Yellow Cake mix (15 oz)
- 1 can Pumpkin Puree (15 oz)
- 1 tsp Pumpkin Pie Spice
- ½ cup unsalted butter (softened)
- 4 oz Cream Cheese (softened at room temperature)
- 1 tsp Vanilla Extract
- 1 ½ cup Powdered Sugar
- 12 oz Orange Candy Melts
- 6 oz Chocolate Candy Melts
- 3 Tbsp Vegetable Shortening (divided)
Instructions
- Preheat oven to 350°F (175°C). In a mixing bowl, combine yellow cake mix, pumpkin puree, pumpkin pie spice, and softened butter using an electric mixer until smooth.
- Pour batter into a greased baking sheet and bake for about 30 minutes or until a toothpick comes out clean. Allow cooling completely.
- Prepare frosting by beating cream cheese and vanilla extract together, then gradually add powdered sugar until smooth.
- Crumble the cooled cake and mix with frosting until dough-like consistency is achieved. Roll into one-inch balls and place on parchment-lined baking sheet.
- Melt orange candy melts with one tablespoon of vegetable shortening. Dip one end of each stick into melted candy before inserting it into each cake ball.
- Coat each cake pop in melted candy melts and allow excess to drip off before setting back on parchment paper.
