Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup white sugar
  • 3/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 (15 oz) can pure pumpkin
  • For the glaze: 3 oz cream cheese, 1 cup powdered sugar, milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a bundt pan with butter or non-stick spray.
  2. In a mixing bowl, whisk together the flour, pumpkin pie spice, baking soda, baking powder, and salt.
  3. In another bowl, mix the vegetable oil, white sugar, brown sugar, vanilla extract, eggs, and pure pumpkin until smooth.
  4. Gradually combine the dry ingredients with the wet mixture using a spatula until just mixed; avoid overmixing.
  5. Pour the batter into the prepared bundt pan and bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool for about 10 minutes before transferring to a wire rack. Once completely cooled, prepare the glaze by mixing softened cream cheese with powdered sugar and milk until smooth. Drizzle over the cake before serving.
