- 1 cup canned pumpkin puree
- 2 large eggs
- 1/2 cup melted butter (or coconut oil)
- 3/4 cup brown sugar
- 1/4 cup maple syrup
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 1 tsp vanilla extract
- Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a large bowl, mash the bananas until smooth. Mix in pumpkin puree, eggs, melted butter, brown sugar, maple syrup, and vanilla extract until combined.
- In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ground cloves.
- Gently fold the dry ingredients into the wet mixture using a rubber spatula until just combined. If desired, stir in walnuts or chocolate chips.
- Pour batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
